The “allioli” or “garlic oil” is a quintessential Mediterranean salsa and as its name indicates, it is achieved by emulsifying garlic with oil. But beware, not all “allioli” sauce producers use olive oil, as we do and as the tradition dictates.

The grilled meat and vegetables would not be the same without the “alliloli” sauce, nor the rice or the “fideuás” (noodles). Also accompanying any fish, but mostly the cod cooked au gratin.

And if you prepare a snack, do not forget the potatoes with “alliloli” sauce!
